

Chicken heart is the first category low-caloric by-product. It is used in cooking and in the production of ready-to-cook products (meat dumplings, varenyky, etc.), sausages, pastes.
The chemical composition of the chicken heart is as follows: 100 grams of hearts contain:
-15.8 g of protein;
-10.8 g of fat;
-0.8 g of carbohydrates.
Relatively low-caloric, 100 g contain 160 kcal
Organoleptical properties of the product:
- length 3-5 cm;
- average weight of one heart is 25-30 g;
- uniform colouring, dark red;
- low moisture content;
- dense structure.
The value of the by-product is conditioned by the significant content of vitamins A, B and PP. Hearts contain macro- and microelements important for the body: potassium, phosphorus, iron, copper and magnesium.
