Chicken skin is a secondary product of production. Being a valuable nutritional product, chicken skin is widely used by meat processing enterprises. This is a thin layer of protein and fat mass.

Caloric content of the raw product is quite high – 349 kcal.

The skin contains:

-13.33 g of proteins;

-32.35 grams of fat.

It contains the following vitamins: B2, B6, B12, A, E, a group of minerals: phosphorus, magnesium, iron and potassium.

Chicken skin, as a rule, is widely used by both cooks and meat processing enterprises. It is used for stuffing as a natural casing for the production of sausages and rolls. In the meat industry, skin is added to minced meat, meat dumplings, meatballs, and cutlets.
