Chicken gizzards are referred to the category I by-products. These are a muscular organ consisting of four layers of muscle tissue.
In its structure, the meat is firm and elastic.
The by-product ready for sale is of dark red colour, may have a white and yellow film, and is used in meat production to make minced meat, for example.

Composition and caloric value
Gizzards contain up to 20-22% of full-rate animal protein. They are a source of fiber and ash, serving as a natural absorbent.
In addition, its composition includes valuable minerals: potassium and sodium, phosphorus and calcium, zinc and ferrum, copper.
There are folic and ascorbic acids, niacin and riboflavin in the gizzards.
These have a fairly high content of poly-and monounsaturated, as well as saturated acids.
